Roasted Tomato Sauce

Ingredients

Makes enough for 6-8 ppl

Cocktail tomatoes - cut in half
Basil
Olive oil
Parmesan cheese
Salt
Whole garlic cloves
2-3 roasting dishes 


Directions

Heat oven to 425
Pour some olive oil at the bottom of the roaring dish
Cut tomatoes in half and place face side up in a roasting dish
Sprinkle salt all over tomatoes
Sprinkle parmesan all over tomatoes 
Cut and sprinkle basil all over
Roast tomatoes until almost caramelized (about 1-1.5hrs)
Take them out of the oven and smash the tomato mixture until all mashed together 
Combined all mixture into one dish and place back into the oven for 20-40 mins until dark in color and looking caramelized 
Salt to taste and mix with favourite pasta
Top with fresh basil then serve
