Grilled Panko & Parmesan Crusted Chicken Skewers

Feeds 6 ppl

Ingredients:

Chicken breast (3 large)

Fresh parsley

1 cup of panko

1 cup of parmessan

Paprika

Garlic powder

Onion powder

Salt & Pepper

1/2 cup of white wine

1/2 cup of olive oil

2 lemons

1/4 cup of butter


Cut chicken into cubes.  Marinate with spices, olive oil, white wine & 1 lemon.  Refrigerate for 1-5 hours.


Take chicken out of the fridge, add panko, parmesan and parsley.   Mix well then skewer the chicken.  BBQ until cooked.  Mix lemon, butter and parsley.  Remove chicken from skewers, add to a serving bowl and pour over the butter, lemon and parsley mixture then serve.
