Bourbon French Onion Steak Wheels

Ingredients:

Skirt or Flank steak (tenderize and flatten out to make rolling easy)
Sliced Swiss Cheese
3 Onions
2 tbsp of butter
1/4 cup of Bourbon
2 tbsp Brown sugar
1 tbsp Fresh Rosemary
3 garlic cloves
2 tbsp of Fresh Parsley

Instructions:

Melt butter & cook the onions until carmelized
Add garlic for 1 min then add the Bourbon, brown sugar & herbs.  Cook until the bourbon is evaporated, about 2-3 mins.

Meanwhile...
Tenderize the steak, make it flat enough and easy to roll
Salt the steak
Add swiss cheese slices to cover the entire steak

Cool the onions & drain the of any excess liquid then spread them over entire area of the flattened steak

Roll the steak and then tie various parts with twine.  You'll then slice it to make 2.5-3 inch wide wheels.  

BBQ for approx 15 mins

For a little extra....grate some gruyere and mix with melted butter.  Add on top of the cooked steak wheel, use a culinary torch to melt.  Voila!
